Refreshing Raw Summer Salad

Our bodies crave raw fruits and veggies in the summer. They are so plentiful during this time of year and are full of water. I believe our bodies receive a more sustained hydration from these fruits and veggies compared to just drinking straight water because of the fiber in them. This slows everything down in the digestive tract and helps us absorb more water into our cells.

I must say, please continue drinking plenty of filtered water as well! Water is magic.

I am just beginning to read The Hidden Messages in Water by Masaru Emoto. My boyfriend's mother works for an airline and someone happened to leave it behind in their seat. She handed it to me when we were visiting and said she thought I would like it. !!!! The universe and it's synchronicities! I have been looking into this water stuff for a while now and I've been looking to purchase a book about it.

If you didn't already know, water molecules can change structure according to your thoughts, words and feelings. As it says on the book cover of Hidden Messages in Water, ..."Masaru Emoto, who has discovered that molecules of water are affected by our thoughts, words, and feelings. Since humans and the earth are composed mostly of water, his message is one of personal health, global environmental renewal, and a practical plan for peace that starts with each one of us."

I feel that water is severely understudied. So, for now, just hold your water glass in your hands before sipping and speak a few affirmations into it. Drink and feel those affirmations within!

Refreshing Raw Summer Salad (V + GF)

Servings: 3ish

Time: around 10 minutes


Ingredients:

2 organic cucumbers or 6-8 mini cukes

2 large organic tomatoes

1 large avocado

1/4 purple onion

1 organic lime, juiced

1-2 TB olive oil (I also add a drizzle of hemp oil for the extra healthy fats)

Sea Salt

Fresh ground black pepper


Minced fresh herbs, optional

Garbanzo beans, optional


Directions:


Wash your veggies! Get out a medium sized glass bowl. Dice cucumbers and tomatoes into small, bite-sized pieces. Add to your bowl. Mince up your purple onion and add around 1/4 c to your bowl. Dice up your avocado and add it in if eating right away (See note!). Then finish by mixing in your fresh lime juice, healthy oils and your desired amount of salt and pepper. Give it a stir and enjoy that freshness.


Notes:

- Fresh oregano, parsley or cilantro would be delicious in this salad.

- If I'm making it a meal, I like adding some cooked garbanzo beans as well as you can see in the photo!

- This salad tastes the best after it sits overnight in the fridge. The flavors mingle and it's extra delicious. If you plan to let it sit in the fridge overnight, add fresh cut avocado in right before eating to avoid that brown color.
